Recipe Series- Warm Chia Porridge with Caramelised Bananas

Ingredients

  • 2 cups unsweetened almond milk (or choice of plant-based milk)
  • 1/2 cup chia seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • pinch of salt
  • berries for topping
  • nut butter for topping (peanut or almond)
  • cinnamon for topping

For the caramelised bananas:

  • 2 teaspoons coconut oil
  • 2 medium bananas, sliced
  • 1 tablespoon pure maple syrup
  • pinch of salt
  • dash of cinnamon

Directions

  1. Bring almond milk and chia to the boil in a pot on the stove. Once boiling, reduce heat to medium and simmer for 5 min or until chia becomes thick and creamy. Add the vanilla, cinnamon, salt and stir to combine.
  2. Meanwhile, heat a non-stick pan over medium heat and add the coconut oil. Add the bananas and cook for 1 min per side, or until they become golden. Add the maple syrup, salt, cinnamon and cook for an additional minute or until e
